Vegan Citrus Quinoa Salad Recipe

Who doesn't love quinoa? Originally from the Andean region of Peru, Bolivia, Ecuador, Colombia and Chile, quinoa is now consumed all over the world. It's gluten-free, high in protein and contains a complete profile of essential amino acids. This vegan citrus quinoa salad is refreshing, filling and satisfying!

INGREDIENTS

Salad:

  • 1 cup quinoa
  • 2 cups water
  • 2 oranges, peeled
  • 1 grapefruit, peeled
  • 2 avocados
  • 1/2 cup pine nuts

Dressing:

  • 1/4 cup apple cider vinegar
  • 1 orange
  • 1/2 cup fresh cilantro
  • 2 tablespoons olive oil
  • Sea salt and pepper to taste

DIRECTIONS

  1. Cook 1 cup dried quinoa with 2 cups of water
  2. For dressing, blend all ingredients in a blender
  3. After the quinoa has cooled, pour dressing over quinoa
  4. Chop oranges, grapefruit, and avocados and toss in salad
  5. Add pine nuts
  6. Add salt and pepper to taste
